Ingredients
- 10 oz ground pork
- 4 large potatoes
- 1 white onion
- 2 garlic cloves
- 1 avocado
- 1 tomato for the salad
- 2 tbsp La Favorita Achiote Oil
- 2 tbsp La Favorita Original
- Salt
- Pepper
- Cumin
- 1 cup shredded queso fresco
Directions
- In a large pot, boil 4 large potatoes until tender. Then peel the potatoes and mash them with a fork in a large bowl.
- In a skillet, heat 2 tbsp of La Favorita Original Oil over medium heat. Add 1 chopped white onion and 2 minced garlic cloves. Cook until golden and fragrant.
- Add 10 oz of ground pork and cook until done. Add 1 tsp of cumin, 1 tsp of ground achiote, and salt and pepper to taste. Cook a few minutes more.
- Add the seasoned pork to the mashed potatoes and mix well. Add 1 cup of shredded queso fresco and mix again until everything is well combined.
- Divide the mixture into portions and shape them into thick patties with your hands.
- Heat a large skillet with a little La Favorita Achiote Oil and cook the llapingachos over medium-high heat until golden and crisp on both sides.
- Serve the llapingachos hot with peanut sauce, avocado and tomato salad, and slices of fried chorizo.
