Albóndigas in Tomato Sauce (Meatballs)

Ingredients

  • 1 lb ground meat (beef, pork, or a mix)
  • 4 large tomatoes
  • 1 white onion
  • 1/2 cup breadcrumbs
  • 2 tbsp La Favorita Soya Oil
  • Salt
  • Pepper
  • Garlic
  • Parsley
  • 1 egg

Directions

  1. In a large bowl, mix 1 lb of ground meat (beef, pork, or a combination) with 1/2 cup of breadcrumbs, 1 beaten egg, 1/4 cup of chopped onion, 2 minced garlic cloves, 1 tsp of chopped parsley, and salt and pepper to taste. Knead well until everything is fully incorporated.
  2. Shape the meat mixture into small walnut-sized meatballs.
  3. In a large skillet, heat 2 tbsp of La Favorita Soya Oil over medium-high heat. Add the meatballs and cook until browned on all sides. Remove from the skillet and set aside.
  4. In the same skillet, add 1 chopped white onion and 2 minced garlic cloves. Cook until golden and fragrant.
  5. Add 4 large tomatoes, peeled and chopped, 1 tsp of sugar, and salt and pepper to taste. Cook over medium-low heat until the tomatoes break down and form a thick sauce.
  6. Return the meatballs to the skillet with the tomato sauce and cook over medium-low heat for 15-20 minutes, making sure they are cooked through in the center.
  7. Serve the meatballs hot with the tomato sauce spooned over the top. They pair well with white rice or pasta.
