Ingredients
- 1 free-range stewing hen (about 4 1/2 lb)
- 2 large red onions
- 4 garlic cloves
- 2 sprigs of cilantro
- 2 bay leaves
- 4 potatoes
- 2 carrots
- 2 tbsp La Favorita Original Oil
- Salt and pepper to taste
- Water
Directions
- Place the hen (about 4 1/2 lb) in a large pot and cover it with water.
- Add 2 large red onions, 4 garlic cloves, 2 sprigs of cilantro, 2 bay leaves and salt to taste.
- Bring the pot to medium-high heat and let it boil. Then reduce the heat to medium-low and simmer for about 2 hours, until the hen is tender and pulls easily off the bone.
- Remove the hen from the pot and shred it into small pieces, discarding the skin and bones.
- Return the shredded chicken to the pot and add 4 potatoes cut into large cubes and 2 sliced carrots.
- Cook over medium heat until the potatoes and carrots are tender, about 30 minutes.
- In a separate skillet, heat 2 tbsp of La Favorita Original Oil and add 2 red onions cut into thin strips. Cook until golden and caramelized.
- Add the caramelized onions to the pot with the broth and adjust the seasoning with salt and pepper to taste.
- Serve the Caldo de Gallina Criolla hot, garnished with fresh cilantro leaves.
