Caldo de Gallina Criolla (Free-Range Chicken Soup)

Ingredients

  • 1 free-range stewing hen (about 4 1/2 lb)
  • 2 large red onions
  • 4 garlic cloves
  • 2 sprigs of cilantro
  • 2 bay leaves
  • 4 potatoes
  • 2 carrots
  • 2 tbsp La Favorita Original Oil
  • Salt and pepper to taste
  • Water

Directions

  1. Place the hen (about 4 1/2 lb) in a large pot and cover it with water.
  2. Add 2 large red onions, 4 garlic cloves, 2 sprigs of cilantro, 2 bay leaves and salt to taste.
  3. Bring the pot to medium-high heat and let it boil. Then reduce the heat to medium-low and simmer for about 2 hours, until the hen is tender and pulls easily off the bone.
  4. Remove the hen from the pot and shred it into small pieces, discarding the skin and bones.
  5. Return the shredded chicken to the pot and add 4 potatoes cut into large cubes and 2 sliced carrots.
  6. Cook over medium heat until the potatoes and carrots are tender, about 30 minutes.
  7. In a separate skillet, heat 2 tbsp of La Favorita Original Oil and add 2 red onions cut into thin strips. Cook until golden and caramelized.
  8. Add the caramelized onions to the pot with the broth and adjust the seasoning with salt and pepper to taste.
  9. Serve the Caldo de Gallina Criolla hot, garnished with fresh cilantro leaves.
