Ingredients
- 1 lb sea bass
- 14 oz mixed seafood
- 1/2 tsp ground garlic
- 2 oz red onion
- 2 oz bell pepper
- 3 1/2 oz tomato
- Cilantro
- A few drops of lime juice, to taste
- 2 tbsp La Favorita Achiote Oil
- 1 tbsp margarine
- La Favorita Original Oil
- Salt, pepper, and cumin
- Chili paste (ají para seco)
- 1/2 cup evaporated milk
- Parmesan cheese to taste
- 1 egg, beaten (for breading)
- 1 cup flour (for breading)
Directions
- Start by preparing the sea bass fillets. Make crosswise cuts in the fillets to shape them into medallions. Season with salt and pepper to taste.
- Set up three dishes: one with beaten egg, one with flour, and one empty. Dip each sea bass fillet in the beaten egg and then in the flour, making sure they are well coated.
- In a large skillet, heat enough La Favorita Original Oil to fry the sea bass fillets. Fry the fillets until golden and crisp on both sides. Then set them on paper towels to drain the excess oil. Set aside.
- In a separate bowl, place the seafood and toss it with the minced garlic, chili paste, and seasonings. Let it marinate for at least 10 minutes.
- Meanwhile, in a separate skillet, sauté the onion, bell pepper, and tomato until tender. Then put these vegetables in a blender and process into a base sauce.
- In the same skillet where you sautéed the vegetables, add the La Favorita Achiote Oil and the La Favorita margarine. Heat over high heat until the margarine melts.
- Add the marinated seafood to the skillet and sauté until cooked and golden.
- Add the blended base sauce to the skillet along with the chopped cilantro. Cook for 3 minutes so the flavors blend.
- Finally, add the evaporated milk to the skillet and cook a few minutes more until the sauce reaches the consistency you want.
- Serve the sea bass fillets with the seafood sauce spooned over them.
