Pollo al Ajillo (Garlic Chicken)

Ingredients

  • 1 whole chicken, cut into pieces
  • 8 garlic cloves, crushed
  • 3 tbsp La Favorita Oil
  • 1 tbsp La Favorita Margarine
  • 1 tsp cumin
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1/2 cup chicken stock
  • Fresh chopped parsley to serve

Directions

  1. Season the chicken pieces with salt, pepper, cumin, and oregano. Let them sit for a few minutes so the chicken absorbs the seasonings well — that's key to this garlic chicken.
  2. In a wide skillet, heat the La Favorita Oil along with the La Favorita Margarine over medium heat. Add the chicken pieces and brown them on all sides until well seared and appetizingly colored. Remove and set aside.
  3. In the same skillet, add the crushed garlic and sauté it over low heat until fragrant, being careful not to burn it. This step is what gives classic pollo al ajillo its character.
  4. Return the chicken to the skillet, add the chicken stock, and cover. Cook over medium heat for 20 to 25 minutes, until the chicken is cooked through and the sauce has reduced slightly.
  5. Adjust the salt if needed, sprinkle with fresh chopped parsley, and serve hot. Pair it with rice, potatoes, or a fresh salad.
