Ingredients
- For the patacones
- 4 green plantains
- La Favorita Oil
- Salt to taste
- For the guacamole
- 2 ripe avocados
- 1 tomato, chopped
- 1/2 red onion, finely chopped
- 1 garlic clove, minced
- 1 lime (juiced)
- A few sprigs of fresh cilantro, chopped
- Salt and pepper to taste
Directions
- For the patacones
- Peel the plantains and cut them into thick rounds.
- In a large skillet, heat enough La Favorita Oil over medium-high heat.
- Fry the plantain rounds until golden on both sides, about 2-3 minutes per side.
- Remove from the oil and set the plantain rounds on paper towels to drain the excess oil.
- Using a glass or a cup, flatten each plantain round into a flat disc.
- Fry the flattened plantain discs again in the hot oil until golden and crisp.
- Remove from the oil and set them back on paper towels.
- Sprinkle with salt to taste.
- For the guacamole
- In a bowl, mash the avocados until smooth.
- Add the tomato, the onion, the garlic, and the chopped cilantro.
- Squeeze the lime juice over the mixture and mix well.
- Season with salt and pepper to taste. Taste and adjust the seasoning to your liking.
- Serve the patacones hot with the fresh guacamole.
