Ingredients
- 4 ripe plantains
- 2 cups all-purpose flour
- 1/2 cup La Favorita Margarine, at room temperature
- 1/2 tsp salt
- 1 tsp vanilla extract
- 2 eggs
- 1 tsp baking powder
- 1/2 tsp baking soda
- Walnuts or almonds (optional, for decorating)
- 3/4 cup sugar
Directions
- Preheat the oven to 350°F and grease a cake pan.
- In a large bowl, mash the plantains with a fork into a purée.
- Add the La Favorita Margarine and the sugar to the plantain purée. Mix well.
- Stir in the eggs and the vanilla extract, beating the mixture until smooth.
- In another bowl, sift the flour, baking powder, baking soda, and salt. Add these dry ingredients to the wet mixture and stir until the batter is smooth.
- Pour the batter into the prepared pan and spread it evenly.
- Optionally, decorate the top with walnuts or almonds.
- Bake for about 40-45 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool before slicing and serving.
