Papas con Cuero (Potatoes with Crispy Pork Skin)

Ingredients

  • About 1 lb pork skin, cut into squares
  • 2 white onions, one cut into chunks and one finely chopped
  • 8 potatoes, peeled and chopped
  • 1 sprig of cilantro, finely chopped
  • La Favorita Original Oil, as needed for drizzling over the potatoes and pork skin
  • Salt to taste
  • Pepper to taste
  • 2 tbsp peanut paste
  • 1/4 cup milk

Directions

  1. Wash and scrub 4 large potatoes with the skin on, then dry them.
  2. In a large pot, add enough water to cover the potatoes and bring it to a boil.
  3. Add the potatoes and cook over medium-high heat until tender but still firm. This takes about 15-20 minutes.
  4. Meanwhile, preheat the oven to 400°F.
  5. In another pot, boil enough water to cover the pork skin.
  6. Add the pork skin and cook over medium-high heat for about 30-40 minutes, until tender.
  7. Remove the pork skin from the water and place it on a baking sheet.
  8. Cut the potatoes into thick slices and arrange them around the pork skin.
  9. Sprinkle salt and pepper to taste over the potatoes and pork skin.
  10. Drizzle generously with oil.
  11. Bake for about 15-20 minutes, until the potatoes are golden and the pork skin is crispy.
  12. Remove from the oven and serve hot.
