Ingredients
- About 1 lb pork skin, cut into squares
- 2 white onions, one cut into chunks and one finely chopped
- 8 potatoes, peeled and chopped
- 1 sprig of cilantro, finely chopped
- La Favorita Original Oil, as needed for drizzling over the potatoes and pork skin
- Salt to taste
- Pepper to taste
- 2 tbsp peanut paste
- 1/4 cup milk
Directions
- Wash and scrub 4 large potatoes with the skin on, then dry them.
- In a large pot, add enough water to cover the potatoes and bring it to a boil.
- Add the potatoes and cook over medium-high heat until tender but still firm. This takes about 15-20 minutes.
- Meanwhile, preheat the oven to 400°F.
- In another pot, boil enough water to cover the pork skin.
- Add the pork skin and cook over medium-high heat for about 30-40 minutes, until tender.
- Remove the pork skin from the water and place it on a baking sheet.
- Cut the potatoes into thick slices and arrange them around the pork skin.
- Sprinkle salt and pepper to taste over the potatoes and pork skin.
- Drizzle generously with oil.
- Bake for about 15-20 minutes, until the potatoes are golden and the pork skin is crispy.
- Remove from the oven and serve hot.
