Ingredients
- 7 oz ground beef
- 1 cup chopped bacon
- 2 large grilling chorizos
- 1/2 cup pork chicharrón (cracklings)
- 1 avocado
- 1 ripe plantain
- 2 cups cooked red beans
- 1 white onion, chopped
- 1 tomato, chopped
- Cooked white rice
- 2 tsp La Favorita Oil
- 2 arepas
- Salt to taste
- 1 cup concentrated chicken broth
- 1 egg
Directions
- In a blender, add the white onion, the tomato, salt to taste, and the concentrated chicken broth. Blend until smooth. Set aside.
- In a pot, add La Favorita Oil and the bacon. Cook until the bacon is browned and crispy.
- Add half of the blended mixture to the pot, along with the red beans. Cook over medium heat for about 20 minutes, until the beans are cooked through and tender. Add water if needed to keep the right consistency.
- Meanwhile, in a separate skillet, add La Favorita Oil and the other half of the reserved blend. Add the ground beef and the chicharrón. Cook until the ground beef is cooked through and browned.
- In another skillet with La Favorita Oil, fry the chorizo, the ripe plantains, and the eggs until cooked through.
- To serve, place a portion of beans on a platter, along with white rice, chorizo, arepa, egg, ground beef, and avocado.
