Beef Tenderloin with Popcorn Mashed Potatoes

Ingredients

  • 14 oz trimmed beef tenderloin
  • 2 slices of bacon
  • 1 cup asparagus
  • La Favorita Oil
  • 2 tbsp La Favorita Margarine
  • Salt and whole peppercorns
  • 1 bag of popcorn
  • 2 tbsp butter
  • 2 tbsp Greek yogurt
  • 1/2 cup milk
  • 1 1/2 cups red wine
  • 2 tbsp sugar
  • 1 lb potatoes, peeled and cut

Directions

  1. In a large skillet over high heat, add La Favorita Oil and place the beef tenderloin in it. Cook without moving it for 3 minutes per side. The cooking time depends on how you like it done (rare, medium, well done).
  2. Season the tenderloin with salt and pepper to taste, then set it aside on a plate.
  3. In the same skillet, add the red wine and the sugar. Wait for the mixture to reduce and thicken slightly into a sauce.
  4. Meanwhile, make the mashed potatoes. Cook the potatoes until tender, then mash them until smooth.
  5. Process the popcorn very finely until it becomes a powder.
  6. Mix the mashed potatoes with the popcorn powder, adding milk, yogurt, and La Favorita Margarine. Mix well until smooth and creamy. Adjust the amount of milk depending on the texture you want.
  7. Blanch the asparagus by dropping it in boiling water for a few minutes. Then, in the same skillet, brown the bacon.
  8. In the same skillet, sauté the asparagus until tender and wrap it in the browned bacon.
  9. Serve the beef tenderloin with the mashed potatoes and the bacon-wrapped asparagus. Spoon the reduced red wine sauce over the tenderloin.
