Ingredients
- For the filling
- 1 1/4 lb fresh shrimp, peeled and cleaned
- 2 tbsp La Favorita Original Oil
- 1/2 cup finely chopped red onion
- 1/4 cup red bell pepper, cut into small cubes
- 2 garlic cloves, finely minced
- 2 tbsp fresh chopped cilantro
- 1/2 tsp cumin
- 1 tsp salt
- Pepper to taste
- 2 tbsp La Favorita Achiote
- For the white sauce
- 2 tbsp La Favorita Margarine
- 2 tbsp all-purpose flour
- 2 cups milk
- 1/2 cup cream cheese or ricotta
- Salt, pepper, and nutmeg to taste
- For assembly
- 9 lasagna sheets
- 1 cup shredded mozzarella cheese
- 1/2 cup Parmesan cheese
- 1 tbsp La Favorita Original Oil (for greasing the pan)
Directions
- In a large skillet, heat the 2 tbsp of La Favorita Original Oil. Add the onion, the garlic, and the red bell pepper.
- Sauté until soft and fragrant. Add the La Favorita Achiote, the cumin, salt, pepper, and mix well.
- Stir in the shrimp and cook for about 3-4 minutes, until they turn pink and juicy.
- Take off the heat and add the chopped cilantro. Set aside.
- In a pot, melt the La Favorita Margarine. Add the flour and stir constantly for 1 minute. Whisk in the milk a little at a time, without stopping, until you have a thick, lump-free sauce.
- Add the cream cheese or ricotta, salt, pepper, and a pinch of nutmeg. Stir until creamy.
- Grease a baking dish with a little La Favorita Original Oil.
- Lay down a layer of lasagna sheets, followed by a layer of the shrimp filling, a layer of white sauce, and a generous shower of mozzarella.
- Repeat the layers until you're done. Finish with Parmesan on top.
- Bake the lasagna in an oven preheated to 350°F for about 25-30 minutes, or until the cheese is bubbling and golden.
- Take it out, let it rest for 10 minutes, and serve.
