Filet Mignon in Mushroom Sauce

Ingredients

  • 4 filet mignon steaks (6-7 oz each)
  • 1 onion
  • 2 garlic cloves
  • 8 oz mushrooms
  • 2 tbsp La Favorita Oliva (Olive) Oil
  • Salt and pepper to taste
  • 1 cup beef stock
  • 1/2 cup red wine
  • 1 tbsp butter

Directions

  1. In a large skillet, heat 2 tbsp of La Favorita Oliva Oil over medium-high heat.
  2. Add 4 filet mignon steaks and cook on both sides until browned outside but still juicy in the center. Remove the steaks from the skillet and set aside.
  3. In the same skillet, add 1 chopped onion and 2 minced garlic cloves. Cook until golden and fragrant.
  4. Add 8 oz of sliced mushrooms to the skillet and cook until tender and they have released their juices.
  5. Add 1 cup of beef stock and 1/2 cup of red wine. Cook over medium-high heat until the sauce reduces by half.
  6. Add 1 tbsp of butter and stir until it melts into the sauce.
  7. Return the filet mignon steaks to the skillet with the sauce and cook over medium-low heat for a few minutes so they soak up the flavors.
  8. Serve the filet mignon steaks with the mushroom sauce spooned over the top. They pair well with mashed potatoes or steamed vegetables.
